It's not easy to manage your class schedule with homework, sleep, work and not to mention eating. As busy students, planning when to eat, what to eat and grocery store runs can get quite hectic and stressful. That's why in each issue of MIX we're providing you with a menu plan, complete with a shopping list. You will no longer have to waste time wondering, "What can I fix for dinner?" This quick and easy, not to mention wallet-friendly, menu plan will help you make hearty meals, without the added stress.

Easy Chicken Quesadillas


2 chicken breasts
1 cup chopped cilantro
2 cups shredded cheese
flour tortillas

Recipe instructions
  1. Boil the chicken breasts and drain in the sink when fully cooked. Cool then shred the chicken by hand or use a fork. Place shredded chicken in a large bowl.
  2. Chop cilantro and add to chicken. Add shredded cheese. You may want to add more cilantro and/or cheese depending on your preference.
  3. Scoop about a half cup on to half of a flour tortilla. Fold the other half of the tortilla over the top of the filling. Press down with a spatula. Place in a frying pan over medium-high heat. Fry until cheese melts and outside of tortilla is brown and crispy.

Optional toppings: salsa, sour cream, hot sauce, avocado or guacamole, sliced green onions

BBQ Pulled Pork Sandwiches


2 pounds of pork roast
1 sliced onion
1 can of root beer
1 bottle of BBQ sauce
Hamburger buns

Recipe instructions

  1. Place roast in a crock pot. Throw in onions around and on top of roast. Pour root beer over roast and onions. Cook on high for 5 to 6 hours.
  2. Shred meat with a fork. Pour in BBQ sauce and cook on low for about 30 minutes.
  3. Serve on hamburger buns.

Optional toppings: coleslaw, lettuce

Fancy Ramen


1 package of instant ramen
1 boiled egg
2 Tablespoons chopped green onion

Recipe instructions

  1. Boil ramen according to package instructions. Add flavoring and place in a bowl.
  2. Slice the boiled egg and add to soup. Sprinkle with chopped green onion.

Optional toppings: sesame seeds, canned corn, chili oil

Easy Pasta Salad


2 cups uncooked pasta
1/2 cup sliced pepperonis
1 cup cubed cheese
Italian dressing to taste

Recipe instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, slice pepperonis in half and cube cheese.
  3. Drain and run under cool water until pasta is cool to the touch.
  4. Combine pepperonis, cheese and pasta. Add Italian dressing to taste.

Optional ingredients: sliced olives, sliced green onion, chopped tomatoes, chopped cucumbers

BBQ Pulled Pork Salad


Salad mix
Leftover pulled pork
Chopped tomato
1 tablespoon corn
1 tablespoon black beans
1 teaspoon chopped green onions
ranch dressing to taste

Recipe instructions

  1. Place salad mix in a large bowl or on a plate.
  2. Top with pulled pork, corn, black beans, green onions and dressing to taste.

Taco Soup


1 pound ground beef
1 chopped onion
1 can whole corn
1 can black or pinto beans (or leftover beans from Friday)
1 can diced tomatoes
1 package taco seasoning
1 cup water

Recipe instructions
  1. Fry onions and ground beef until beef is fully cooked. Drain meat of excess oil.
  2. In a large pot over medium-high heat, combine meat, corn (with juice), drained beans, tomatoes (with juice), taco seasoning, and water.
  3. Cook and stir until warm. Add more water until desired consistency.
  4. Top with favorite toppings.

Optional ingredients: 1 (4 ounce) can green chilies, cheese, corn chips or tortilla chips, sour cream

Texas Baked Potato

1 baked potato
1 cup leftover taco soup
sour cream
chopped tomatoes
chopped green onions

Recipe instructions
  1. Bake the potato.
  2. Using a slotted spoon, scoop out 1 cup of leftover taco soup draining the liquid.
  3. Slice potato and top with drained taco soup, sour cream, chopped tomatoes and chopped green onions.

1 small package pasta (like fusilli)
1 package corn or tortilla chips*

1 bottle Italian dressing (or Italian dressing mix)
1 can black or pinto beans
1 bottle ranch dressing
1 can diced tomatoes
