Dining Services Hired New Chef with 24 Years Experience
at Legends Grille
Wayne Griffin has been hired as the head chef
for Legends Grille. With 24 years of culinary experience
and formal culinary training, Griffin will be
a great addition to the BYU community.
Griffin attended The Culinary Institute of America
in New York and California Culinary Academy in
California to receive formal culinary education.
He was the executive chef at his last three places
of employment, which include: Provo Lodge No. 849
Elks, Restaurant Roy and Provo Park Hotel. He is
now looking forward to working in a different environment.
“I am really excited about this new job at Legends Grille,” Griffin
said. “I have been in the food business for years and I am excited to expand
my talents and use my expertise at BYU.”
Aaron Black, general manager of Legends Grille, said there was a strong applicant
pool to choose from, but chose Griffin because of his experience and ability
to make people feel welcome in his restaurant.
“
He has worked in the Provo area for 15 years and understands BYU fans,” Black
said. “Griffin will create a lively sports atmosphere where people will
want to come hang out.”
As head chef, Griffin will be in charge of all aspects of restaurant operation,
creating delicious food, providing excellent customer service and hiring wait
staff and kitchen help.
Expected to open March 2004, Legends Grille will be a place for cougar fans to
come enjoy delicious food while watching sports on 11 plasma screen TVs. Legends
is a Euro kitchen--customers can watch the food being prepared. Legends menu
will include: specialty pizzas, sandwiches and salads, rotisserie chicken, salmon,
steaks, and much more.
